
Even if you eat in 5-star restaurant, it wouldn’t match that you get from eating in the road-side Dhabas! Dhaba foods are always unique and much flavorful. It’s been a very long time since I have eaten in one. So, today I wanted to try to this simple Dhaba style Egg masala gravy for dinner. Though it’s no match for those charcoal-cooked Dhaba gravy, the taste was fantastic and we really enjoyed licking till the bowl was empty.

Ingredients

For the masala gravy:
Finely chopped Onion | 2 cups |
Green chilles(finely chopped) | 2 |
Ginger garlic paste | 1 tbsp |
Tomato puree | 1 cup |
Kashmiri Red chilli powder | 1 tbsp |
Coriander powder | 1 tsp |
Fresh ground pepper powder | 1 tsp |
Cumin powder | 1/2 tsp |
Turmeric powder | 1/4 tsp |
Garam masala powder | 1 tsp |
Split gram(Pottukadalai) powder | 1 tbsp |
Salt | 2 tsp |
Water | 1/2 cup |
Cumin seeds | 1 tsp |
Cloves | 3 |
Cinnamon | 1 inch |
Cardamom | 2 |
Coriander leaves | 1 stalk |
Oil | 2 tbsp |
For Frying egg:
Boiled eggs | 3 |
Red chilli powder | 1/2 tsp |
Turmeric powder | 1/4 tsp |
Coriander powder | 1/2 tsp |
Salt | 1/2 tsp |
Oil | 1 tbsp |
Method
- Boil the eggs and prick them with fork for the masala to get inside.

- Heat a pan, add oil and the masala items mentioned under ‘For frying egg’. Keep the flame in low and add the pricked eggs to the masala. Fry for a few mins and switch it off.

- Heat another heavy-bottomed pan, add oil followed by the garam masala items – cloves, cinnamon, cardamom and cumin seeds.

- Now add the finely chopped onions and fry at high flame for 7-8 mins until they turn dark brown and crispy.

- Add ginger-garlic paste and fry until the raw smell disappears.

- Now, add all the masala powders – red chilli powder, cumin powder, coriander powder, pepper powder, turmeric powder and salt. Add a little bit of water and fry the masala for 2 mins. If using regular red chilli powder, add only 1/2 tbsp.
- Add the tomato puree and cook for 5-10 mins until the tomato is cooked well.

- Now add the split gram powder. Cover and cook for another 7-8 mins in medium flame. Add the remaining water and simmer the gravy.

- The oil will separate and float on top. Now add the fried eggs to the gravy and cook for another 5 mins. Switch off.

- Serve hot with Chappathi, Roti or phulka!!
