Dhaba style Egg gravy

Even if you eat in 5-star restaurant, it wouldn’t match that you get from eating in the road-side Dhabas! Dhaba foods are always unique and much flavorful. It’s been a very long time since I have eaten in one. So, today I wanted to try to this simple Dhaba style Egg masala gravy for dinner. Though it’s no match for those charcoal-cooked Dhaba gravy, the taste was fantastic and we really enjoyed licking till the bowl was empty.

For the masala gravy:

Finely chopped Onion2 cups
Green chilles(finely chopped)2
Ginger garlic paste1 tbsp
Tomato puree1 cup
Kashmiri Red chilli powder1 tbsp
Coriander powder1 tsp
Fresh ground pepper powder1 tsp
Cumin powder1/2 tsp
Turmeric powder1/4 tsp
Garam masala powder1 tsp
Split gram(Pottukadalai) powder1 tbsp
Salt2 tsp
Water1/2 cup
Cumin seeds1 tsp
Cinnamon1 inch
Coriander leaves1 stalk
Oil2 tbsp

For Frying egg:

Boiled eggs3
Red chilli powder1/2 tsp
Turmeric powder1/4 tsp
Coriander powder1/2 tsp
Salt1/2 tsp
Oil1 tbsp


  • Boil the eggs and prick them with fork for the masala to get inside.
  • Heat a pan, add oil and the masala items mentioned under ‘For frying egg’. Keep the flame in low and add the pricked eggs to the masala. Fry for a few mins and switch it off.
  • Heat another heavy-bottomed pan, add oil followed by the garam masala items – cloves, cinnamon, cardamom and cumin seeds.
  • Now add the finely chopped onions and fry at high flame for 7-8 mins until they turn dark brown and crispy.
  • Add ginger-garlic paste and fry until the raw smell disappears.
  • Now, add all the masala powders – red chilli powder, cumin powder, coriander powder, pepper powder, turmeric powder and salt. Add a little bit of water and fry the masala for 2 mins. If using regular red chilli powder, add only 1/2 tbsp.
  • Add the tomato puree and cook for 5-10 mins until the tomato is cooked well.
  • Now add the split gram powder. Cover and cook for another 7-8 mins in medium flame. Add the remaining water and simmer the gravy.
  • The oil will separate and float on top. Now add the fried eggs to the gravy and cook for another 5 mins. Switch off.
  • Serve hot with Chappathi, Roti or phulka!!
